Nectarine Infused Salmon


Salmon Fillets, skin on
2 tbspns fresh Coriander, minced
2 tbspns Red Onion. minced
2 tbspns Lime Juice
Extra Virgin Olive Oil
1 large Nectarine, sliced into thin wedges (the juicier, the better. Yellow fleshed works better than white fleshed)

Pre-heat oven to 210c
Brush the skin side of the Salmon with the EVOO and place skin down on a wire rack
Mix the minced Red Onion, minced fresh Coriander and Lime Juice together
Press the Nectarine wedges evenly into the Salmon
Spread the Onion, Coriander and Lme Juice mix evenly over the Nectarine
Drizzle with Olive Oil

Bake in the oven for 15 mins

Serve with a salad of green leafy veggies, tomato and avocado.
